Ingredients (For 12 pieces)
- ½ cup milk
- 2 bananas, mashed
- 2 cups all-purpose flour
- ½ teaspoon salt
- 3 teaspoons baking powder
- 2 eggs, beaten
- 1 tablespoon margarine, melted
- Fortune Cooking Oil
- ½ cup confectioners' sugar
Method
- Combine the milk and bananas in a mixing bowl. Add the the flour, salt, and baking powder to the mix.
- Thoroughly mix in the eggs and margarine with this.
- Heat the Fortune Cooking Oil in a large skillet to about 180 degrees C.
- Place spoonfuls of the mixture into the hot oil and fry until it turns brown. Flip the fritter and continue to brown the other side.
- Remove the fritters from the oil and drain on paper towels.
- Dust the fritters with confectioners' sugar and serve while they are warm. (Also you can serve this with maple syrup or honey instead)
