Samosa

A delicious treat that will make your whole family happy!
The crispy coating and the inner mix of a samosa is the best combination for an evening snack.

Ingredients

  • 8 inch flour tortillas 
  • 1 lb ground turkey or beef 
  • 2 large boiled potatoes 
  • 1/2 cup chopped onions 
  • 1/4 cup frozen peas 
  • 1 tspn cumin seeds 
  • 1 tbsp coriander seeds 
  • 1 tspn chopped garlic 
  • 2 tspn chopped ginger 
  • 2 green chillies 
  • 1/2 tspn turmeric powder 
  • 2 tspn garam masala 
  • 2 tspn red chili powder 
  • 2 tspn lemon juice 
  • 2 tbsp vinegar 
  • salt to taste 
  • Fortune cooking oil for deep frying 

Method - Mix

  1. Heat a pan with 1 tbsp oil and add the chopped onions. 
  2. When its light brown, add chopped ginger, green chillies and garlic. 
  3. Then add coriander, cumin seeds, turmeric powder and stir well. 
  4. Now add ground turkey or beef, garam masala, red chili powder, vinegar, salt to taste, stir well and let it cook until well done. 
  5. Then add the green peas and stir for a while. 
  6. Meanwhile, peel and mash the potatoes and add to the filling. 
  7. Add the lemon juice, mix well and remove from fire. 

Method
  1. Cut each tortilla (circle) into two and lightly dampen the edges of each semicircle with lightly beaten egg white. 
  2. Shape each semi-circle onto a cone by pressing the cut edges together. 
  3. Place 1 1/2 tablespoon full of filling into the cone and seal the edges well (Repeat this with the rest of the tortillas). 
  4. Deep fry in medium hot oil about 2 at a time until crisp and golden brown. 
  5. Remove to a paper towel.

Fried Cauliflower


Ingredients 

  • 1 head cauliflower, broken into small florets
  • 1 egg
  • 2 teaspoons milk
  • 1 cup cracker crumbs
  • 4 cups Fortune oil for deep frying


Directions
  1. Place cauliflower into a pan of lightly salted boiling water. Cook for 5 to 8 minutes, or until tender. Remove from heat, drain and cool.
  2. Heat oil in a deep-fryer.
  3. In a small bowl, whisk together the egg and milk with a fork. Place cracker crumbs in a shallow dish. Dip cauliflower in the egg mixture then roll in cracker crumbs.
  4. Fry coated cauliflower in the hot oil until golden brown.
  5. Drain on paper towels.

Devilled Soya Dish

Soya has been proved a healthy food item for young as well as for old people. They are pure vegetarian beans, hence good choice for the vegetarians as well. They are high in protein and good amount of vitamins, minerals, fiber are contained in them! Deviled Soya Dish is something you can try very easily. Try this out at your home and be enriched with all these benefits!

Ingredients
  • Soya Chunks - 200 g
  • large Onion - 1
  • Medium Tomato - 1
  • Banana Peppers (Malu miris) or any other Peppers - 1 or 2  
  • Dried crushed red chilies - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt to taste
  • Ketchup or Tomato Sauce
  • Soy Sauce - 1 teaspoon
  • Garlic - 2 Cloves  chopped
  • Ginger - 1 small piece  chopped
  • Fortune Cooking Oil


Method
  1. Cut the large Onion into 2 inch pieces, medium size Tomato into chunks and Banana Peppers into slices. Chop the Garlic and Ginger
  2. Add the soya chunks to boiling water with a pinch of salt and let stand for 10 minutes.
  3. Drain the water and squeeze the soya chunks thoroughly to remove all the absorbed water.
  4. Cut the soya chunks into small pieces.
  5. Heat a non-stick pan with about 2 tablespoons of Fortune Cooking oil and pan fry until all sides are golden brown (You can add more oil if needed)
  6. Then add dried crushed red chillies, chilli powder, chopped garlic, ginger and onion and stir fry for a while.
  7. Now add peppers, tomatoes, salt, soy sauce and stir.
  8. Finally add ketchup (Tomato Sauce) as desired and remove from stove.

කජු මාළුව

අවශ්‍ය ද්‍රව්‍ය
  • කජු - 250g
  • ග්‍රීන් පීස් - 50g
  • උම්බලකඩ -  මේස හැඳි  1
  • පොල් මිටි කිරි - කෝප්ප 2
  • රතුළුණු, සුදුළුණු, රම්පෙ, කරපිංචා, කුරුඳු
  • අමු මිරිස් කරල් - 2
  • ගම්මිරිස් - තේ හැඳි 1
  • කහ - තේ හැඳි 1/2
  • ලුණු - කැපු තේ හැඳි 1
  • Fortune තෙල්
  • තුනපහ කුඩු  - තේ හැඳි 1
  • සුදුළුණු බික් - 3
  • තැලු අමු ඉඟුරු කැබැල්ලක්
  • අබ ස්වල්පයක්


සාදන ක්‍රමය
  1. කජු මද සෝදාගෙන අවශ්‍ය නම් එයට ග්‍රීන් පීස් එක් කරන්න.
  2. ඊට රතුළුණු, උම්බලකඩ, කුරුඳු, අමු මිරිස්, ගම්මිරිස්, කහ, තුනපහ, ලුණු එක් කර අත ගාගන්න.
  3. ඉන්පසු තෙල් තාච්චිය ලිප තබා තෙල් රත්වන විට රම්පෙ, කරපිංචා, ළුණු ස්වල්පයක්, සුදුළුණු, අමු ඉඟුරු සහ අබ දමන්න.
  4. එය සුවඳ වී එනවිට එයට කජු මිශ්‍රණය දමා පිසගන්න.
  5. ඉන්පසු පොල්කිරිද එයට ඒක්‌කර කළවම් කරන්න.

    • අමු කජු මද ද මේ ආකාරයට පිළියෙළ කර ගත හැකිය.
    • අර්තාපල් කුඩු හැන්දක්ද අවශ්‍ය නම් එක්කල හැක.
    • ග්‍රීන් පීස් සහ කැරට් කැබලිද එක්කල හැක.

Hoppers/ Egg Hoppers

Who doesn't like to have a hopper with some spicy curry or sambol in the evening.. what if it's home made??

Well here is a chance to surprise your family and yourself with home made Hoppers.. and Egg hoppers if you are in the mood.

Ingredients
  • Raw rice (Kakaulu haal) - 2 cups
  • Baking powder - ½ Teaspoon
  • Appa soda (Baking soda) - ½ Teaspoon
  • Coconut milk (should be the first milk) - 2 -3 cups
  • Egg (additional if egg hoppers are required) - 1
  • Water from the coconut (Pol wathura)
  • Sugar - 1 Teaspoon
  • Salt to taste
  • Fortune cooking oil

Method
  1. Wash and soak the rice in water for 1 hour; Put the rice into the blender with a cup of Milk / coconut water and blend thoroughly. Strain into container and repeat the process till all the rice is thinly ground and strained
  2. Add baking powder, Appa soda, and sugar and mix well. keep it covered for about 6 hours.
  3. At the required time add the egg, salt to taste and milk to get the mixture in to the correct consistency and mix well.
  4. Get the hopper pan slightly warmed and rub oil with a piece of cloth and keep on low fire again for few minutes,and cover with a lid.
  5. When the pan is warm pour about 1/2 coffee cup of the mixture half into the pan and holding the pan carefully spread the contents around the pan in one round. Cover with the lid and in few minutes when the hopper is done take out carefully.


  • Egg Hoppers
  1. Break an egg into the contents just few seconds after the Hopper had been spread around; sprinkle salt / pepper over the egg.
