Sweet and Sour Chicken

Are you a fan of sweet and sour dishes? Try out this delicious Sweet and Sour Chicken recipe.

Ingredients

  • Pineapple chunks (about 250g), with juice reserved
  • 1/4 cup corn flour
  • 1 3/4 cups water
  • 3/4 cup white sugar
  • 1/2 cup distilled white vinegar
  • 2 drops orange food color
  • 8 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 1/4 cups self-rising flour
  • 2 tablespoons Fortune Cooking Oil
  • 2 tablespoons corn flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 egg
  • 1 1/2 cups water
  • Fortune Cooking Oil for frying
  • 2 green bell pepper, cut into 1 inch pieces

Method
The Sauce
  1. Combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring in a saucepan. Heat it to boiling and turn off heat.
  2. Combine 1/4 cup corn flour and 1/4 cup water. Slowly stir this in the saucepan and continue stirring until the mixture thickens.
The Chicken
  1. Combine flour, 2 tablespoons Fortune Cooking Oil, 2 tablespoons corn flour, salt, pepper, and egg.
  2. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add the chicken pieces, and stir until the chicken is well coated.
  3. Heat the Fortune Cooking Oil in a frying pan. Fry the chicken pieces in hot oil for 10 minutes (until golden). Then remove the chicken and drain on paper towels.
Serve
  1. When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. 
  2. Pour the hot sweet and sour sauce on top.
