Hoppers/ Egg Hoppers

Who doesn't like to have a hopper with some spicy curry or sambol in the evening.. what if it's home made??

Well here is a chance to surprise your family and yourself with home made Hoppers.. and Egg hoppers if you are in the mood.

Ingredients
  • Raw rice (Kakaulu haal) - 2 cups
  • Baking powder - ½ Teaspoon
  • Appa soda (Baking soda) - ½ Teaspoon
  • Coconut milk (should be the first milk) - 2 -3 cups
  • Egg (additional if egg hoppers are required) - 1
  • Water from the coconut (Pol wathura)
  • Sugar - 1 Teaspoon
  • Salt to taste
  • Fortune cooking oil

Method
  1. Wash and soak the rice in water for 1 hour; Put the rice into the blender with a cup of Milk / coconut water and blend thoroughly. Strain into container and repeat the process till all the rice is thinly ground and strained
  2. Add baking powder, Appa soda, and sugar and mix well. keep it covered for about 6 hours.
  3. At the required time add the egg, salt to taste and milk to get the mixture in to the correct consistency and mix well.
  4. Get the hopper pan slightly warmed and rub oil with a piece of cloth and keep on low fire again for few minutes,and cover with a lid.
  5. When the pan is warm pour about 1/2 coffee cup of the mixture half into the pan and holding the pan carefully spread the contents around the pan in one round. Cover with the lid and in few minutes when the hopper is done take out carefully.


  • Egg Hoppers
  1. Break an egg into the contents just few seconds after the Hopper had been spread around; sprinkle salt / pepper over the egg.
